Quick & Easy Chicken Stir-Fry

Some nights are just too busy for extensive meal prep, and that's when this stir-fry recipe comes to the rescue.

Ready in about 20 minutes with no prep work required, it's perfect for those hectic evenings!

INGREDIENTS:

  • 1 tbsp Extra Virgin Olive Oil

  • Frozen Fully Cooked Chicken Breast - you can find this in the frozen aisle in your grocery store, I usually buy Tyson and you can find it in strips, cubes or seasoned! Whatever your preference is will work!

  • Add your favorite vegetables - I love peppers and carrots, but you can add anything, try broccoli, cauliflower and water chestnuts too!

  • 1 tbsp Minced Onions

  • 1 tbsp Honey

  • 1 tsp Sambal Oelek (this will make the dish spicy, omit if you don't like spicy foods)

  • 2 tbsp Soy Sauce

  • Your Favorite Seasonings - I used Ground Ginger, Garlic Salt, Garlic Powder, Onion Powder

  • Optional: Peanuts

Directions

  1. Heat a pan over medium heat and add the extra virgin olive oil

  2. Add the frozen chicken breast and vegetables broccoli to the pan.

  3. Stir in the minced onions, honey, Sambal Oelek, soy sauce, and your preferred seasonings.

  4. Cook and stir until everything is thoroughly heated and well-mixed.

  5. Stir in peanuts for an added crunch

  6. Serve hot with rice, cauliflower rice, or on a tortilla shell.
