Fish Street Tacos 🐠🌮
At our house whenever we need a quick and easy meal our go-to is tacos...who says tacos are only for Tuesdays! However I like to change them up and add in some new ingredients, some of my favorite foods to add in are sweet potatoes - trust me if you have never tried this before you are missing out!
If you really want to try something new, try the recipe below for fish street tacos, you will not be disappointed!
Ingredients:
- 2 tbsp of Butter (or Olive Oil to coat the pan)
- Cod - I used 3 pieces of individually frozen Fremont Alaskan Cod
- 2-3 Sweet Potatoes sliced
- 1 Pepper (I like to mix yellow, red and orange peppers)
- Seasonings:
- 1/2 tbsp Parmesan Cheese
- 1/2 tbsp Minced Onion
- Pinch of Chili Powder (omit if you do not want spicy)
- Pinch of Cayenne Powder (omit if you do not want spicy)
- 1 tsp Garlic Salt
- 1 tsp Paprika
- 1 tsp Onion Powder
- 1 tbsp Lime Juice
Directions:
- Add in butter or oil to a pan to melt
- Add in cod and sauté for 3 minutes
- Add Seasonings (these are my favorites but feel free to add your own favorites)
- Add in peppers and sweet potatoes and sauté for 5-10 minutes
- Add in Lime Juice then cover and steam for 5 minutes
- Well all are cooked to your desired consistency - serve and enjoy
Serve with tortilla shells, over rice or eat by itself 😋
