🎃 Pumpkin Seeds 🎃

It's that time of year - when carving pumpkins turns into a delicious treat 😋Did you know?!?!Pumpkin seeds are rich in vitamins and minerals like manganese and vitamin K, and they also contain zinc. Pumpkin seeds are also an excellent source of phosphorus, magnesium, iron, potassium and copper.There are many different ways to make up pumpkin seeds - but this recipe is my favorite go-to every fall!

Ingredients:

  • Pumpkin (and the seeds 😉)
  • Olive or Coconut Oil (works best for this recipe used with a spray bottle)
  • Seasonings:
  • McCormick Roasted Garlic & Herb
  • Garlic Salt
  • Lawry's Seasoned Salt
  • Creole Seasoning (omit if you don't like spicy foods)

Directions:

  1. Carve your pumpkin and take out all the seeds
  2. Wash and rinse the seeds so you don't have any of the insides of the pumpkin
  3. Once rinsed, lay out seeds in a single layer to dry (you can make this longer or shorter depending on how much time you have - typically I like to leave them out for a few days so they are nice and dry. The longer they dry out the more crunchy they will be.) Typically I will link a baking sheet with tin foil and let dry right on the baking sheet.
  4. Once dried and your are ready to cook, Preheat the oven to 250'
  5. Make sure the seeds are lined on a baking pan and spray (or drizzle) the seeds with oil
  6. Sprinkle on seasonings (come on and get creative and add in your favorites, mine are listed above...don't be boring and only use salt 😂)
  7. Bake for 20-30 minutes and then flip (repeat steps 5-6)
  8. Bake for an additional 20-30 minutes or until crunchy
