Shredded Mexican Chicken

For a quick and easy meal prep, I always like to make shredded Mexican chicken for a quick protein to grab for meals throughout the week...this chicken works well for many dishes, but I love it for tacos, quesadillas and nachos

Ingredients

  • 1 bag frozen chicken breast

  • 1/2 cup salsa

  • 1/4 cup chicken broth

Directions:

  1. Add all ingredients to an Instant Pot and pressure cook on Hi for 15 minutes with a 5 minute natural release

  2. Once cooked, release pressure and then transfer chicken to Stand Mixer (this is my favorite and easy way to shred chicken, if you do not have a stand mixture you can always shred the chicken by hand)

  3. Shred chicken with Stand Mixer on Low for 1-2 minutes
