Baked Black Bean Quesadillas
These baked black bean quesadillas are my new go-to for "Meatless Monday" when I'm looking for a delicious plant-based dinner option.
Not only are they are quick to put together, but all ingredients are usually inexpensive and require little to no prep. An added bonus if you're someone like me who doesn't want to spend a lot of time prepping/cooking dinner.

Recipe makes for 2 people
Ingredients:
-1/2 can of corn, rinsed (7 oz)
-1/2 can of black beans, rinsed (7 oz)
-1 small onion, diced
-2 flour tortillas (or 4-6 corn tortillas)
-1 cup shredded Mexican cheese
-1-2 Tbsp Taco seasoning (or 1/4 tsp of all these spices combined: cumin, garlic powder, onion powder, pepper, paprika)
Directions:
Preheat oven to 450 degrees F
Open corn and black beans and rinse both in a strainer, then combine both in a medium sized mixing bowl
Dice 1 small onion up and add to mixture
Season mixture with taco seasoning or seasoning listed above and mix together
Lay tortillas flat on a baking sheet covered with aluminum foil and add 1/2 of the mixture to one side of each tortilla (do less than half on each if you are using smaller corn tortillas)
Sprinkle 1/2 cup of cheese over the mixture on each tortilla
Fold Tortillas in half, place in oven and bake for 10-15 minutes (or until crispy)
Let cool for about 5-10 minutes, then cut in triangles and enjoy with salsa, sour cream, guacamole, or any other dips you'd like
