Sweet Potato Almond Salad

This is one of my favorite throw-together salads with what I could find in my house - and it was delicious! One that I have to make again - YUM! If you don't have some of the ingredients, get creative and use what you have....mix up the vegetables, protein, and other toppings to make it your own!

Ingredients:

  • 3 large sweet potatoes

  • Drizzle of olive oil

  • Mixed Greens (any kind you want, I used romaine, but you could use spinach or any other of your favorites)

  • Sprinkle of Mozzarella Cheese

  • Handful of Lightly Salted Almonds

  • Favorite Ranch Dressing - I love Chipotle Ranch

Directions:

  1. First, cut up and air-fry the sweet potatoes in an Instant Pot for 25 minutes at 400' making sure to continue to flip about every 5-10 minutes (if you don’t have an Instant Pot, you can use your oven for the same time and temperature)

  2. Add the mixed greens to the bottom of the bowl and top it off with all of the other ingredients 😋
